This pudding, oh this pudding! It is joy-making. The key is the berries dotted throughout the sponge.
Serves 4
Ingredients
⅔ cup sugar
1 egg
1 cup flour
3 tablespoons dark cocoa
2 teaspoons baking powder
A pinch of salt
¼ cup melted butter
2 tablespoons milk
1 cup blackberries
Cream to serve
Sauce
⅔ cup brown sugar
3 tablespoons dark cocoa
1 teaspoon cornflour
2 cups boiling water
Method
1. Heat the oven to 180°C. Grease an ovenproof baking dish.
2. In a medium-sized bowl, whisk together the sugar and egg until fluffy and creamy.
3. To make the pudding, sift together the flour, cocoa, baking powder and salt and fold into the egg mixture. Add the melted butter and milk. Gently fold in the berries.
4. Spread the mixture onto the bottom of the baking dish and prepare the sauce.
5. To make the sauce, sift the brown sugar, cocoa and cornflour evenly over the top of the pudding mixture. Pour the boiling water over the back of a spoon onto the mixture.
6. Bake for 30-40 minutes. The sponge is cooked when a skewer is inserted and comes out clean.
7. Serve drizzled with cream.
